This is my first holiday season as a vegan healthy eater and I need to admit that my family is in shock. Especially my mom. She’s been calling almost every day to ask what to prepare for the household supper and when I explain simply veggies and fruits she appears prepared to cry …

Do not get me wrong, my mother is the master chef of the family, her meals are always so magnificent that my brother spent a couple of years convincing her to open a dining establishment. But they aren’t healthy at all and definitely no vegan like. The arrangements continued a whole week and although I can think up of a great deal of her specialized meals made the vegan means with a little adaptation, the concept of altering her meals isn’t something she’s really keen on. I think no one will be.

Instructions for the Salad Base:
1. Location everything in the food processor and blend well.
